We here at Pin Up Boot Camp want you to look and feel your best from the inside out! This healthy recipe features a surprising root vegetable as the base; and when it comes to veggies for dessert, you can’t beat the beet!!
Imagine a chocolatey, gooey fudge topped with decadent chocolate ganache – without any flour, dairy, eggs, or baking!! You can have your fudge and eat it too!

1 15oz can shoestring beets
1/2 cup coconut oil (solid)
3 tbsp shredded coconut
2 tbsp cocoa powder
1 tbsp each – agave syrup, maple syrup, vanilla extract
Ganache Topping Recipe:
5-6 tbsp cocoa powder
1/4 cup maple syrup (or honey)
1/4 coconut oil (liquid/melted)
1 tsp vanilla (or brewed coffee)
Mix all Fudge ingredients into a processor or blender and combine well, making sure that the beets are finely incorporated in the mixture.
Pour mixture into prepared muffin pans and then set in the refrigerator or freezer until firm.
Meanwhile, mix together all Topping ingredients in a bowl with a whisk. Once the the fudge is firm, remove from the fridge and top with the ganache.
Makes 4-6 servings.
